Tasty Tuesday and Over the Top Cornbread!

Hello Friends and Hello Tasty Tuesday! Our weather finally turned chilly just in time for Trick or Treaters tonight! And I have a delicious sweet cornbread recipe that will make your dear ones say, “I didn’t know cornbread could taste that good!”

But before we go any further, I want to take a moment to thank my dear friend Maribeth for the gorgeous photography this week! I made this for my family for the first time maybe five years ago, and they just kept saying, “This is so good! It tastes like cake!” I just smiled. Truth is, its a cornbread recipe with cake mix in it! Yes, it definitely crosses into a whole new territory when you do that! But its a delicious territory, and one you won’t regret! Without further ado, lets get started!

Ingredients:

  • Yellow Cake Mix
  • 1 Box Corn Muffin Mix
  • 4 eggs
  • 1/3 Cup of Oil
  • 5 Tbsp Melted Butter
  • 1/3 Cup of Milk
  • 1 Cup of Water

Preheat oven to 350° and spray cooking spray on a 9×13 pan. In large bowl, combine your Cake Mix and Corn Muffin Mix and add in your wet ingredients. Mix until well blended. Mixture should be slightly thick.

Pour mixture into your prepared 9×13 pan.

Bake at 350° for 20-25 minutes until edges are golden brown and pulling away from the pan, and test with a toothpick in center- if toothpick comes out clean, its done. If not, try baking a few more minutes and retest.

The aroma is simply heavenly!

You can see below my cornbread sunk a little in the middle. Cake sinking happens for a host of reasons, but as long as it doesn’t look like a bowling ball dropped on it, and as long as the toothpick comes out clean, you should be fine.

Now its time to slice and serve!

It comes out with an exquisite texture, gorgeous color and so so delicious!

But for those that want to take it just a step further…

Add a pat of butter and drizzle a little honey or maple syrup over the top.

That is what this recipe is… over the top!

Now there are all kinds of cornbreads, some are sweet and some are savory. This particular recipe is definitely a sweet cornbread, though I’ve never met a cornbread I didn’t like! But this one… is special!

And you and your precious family and friends are special too, and deserve being treated once in awhile to something that is simply “over the top”!

I had to go to an early meeting this morning and the rain was blowing, and it was dark and cold. It was 37°F, and you know what that means… just a blink away from freezing! But going home, where my warm kitchen still had the smell of coffee still lingering, and my dog greeted me with those eyes that say she thinks I am the best person on the planet… and it struck me just how powerful the home can be! And when we take the time to treat our loved ones to something so special and tasty and yes even sweet, we are providing comfort food for the soul! Making the cornbread may seem somewhat inconsequential, but when you serve it up to the people in your life, you are serving it with love… on a cold night to a tired soul, even yourself! Can you put a price on that?

More and more I am finding the beauty and comfort of rediscovering how lovely it can be to sit down in your own kitchen with friends or family and smile and say “Here, this is for you!”.  And you place a warm sweet piece of cornbread in front of them, and maybe serve it up with some coffee, and there is no better medicine in the world! And you know what? You and your loved ones are worth it! You deserve a cozy tasty supper and a chance to simply rest and enjoy a relaxing evening, put aside the cares of the day and recalibrate. I hope you will spoil yourself a little bit this week with some good comfort food, maybe even some “Over the Top” Cornbread!

  1. Oh, Amy, you’ve done it again! I’ve had cornbread on the mind lately. Maybe because thanksgiving is just around the corner and I make it for my dressing/stuffing and need to get started on it. I will definitely be trying this recipe out!

  2. Cornbread is something we seem to only eat once in awhile with certain things. Like chili. But we need to enjoy it more often. This sounds like a delicious recipe. Going to try it with a batch of soup this week.
