Tasty Tuesday and Smoked Barbecue Chicken

It’s another Tasty Tuesday! Today, we are sharing “Smoked Chicken Barbecue”, and oh is it yummy and super simple!

But before we begin, I wanted to share something with our ladies following this post. I love to cook, so I am constantly watching my weight and needing to exercise more. For anyone that is longing to turn things around from a health perspective, we have a Facebook Group that is taking this journey together. We are committing to getting exercise back into our lives for a 100 day period. It began May 26, but you can jump in whenever you like. It continues until Labor Day Weekend. No judgement. All positivity.

This is the kindest, loveliest group of ladies you could ever meet, and each day we chime in and say what we did that day for some activity or exercise. Could be gardening. Could be walking the dog. Could be a bike ride. But we are conscientiously trying to include activity in our lives. It’s totally free, no one is selling anything. We all just want to get healthier… and my tagline is “because 100 days is going to go by one way or the other.” So if you would like to join us and start taking steps to feel better and gain some new healthy habits, jump on in! Believe me, my jeans were begging me to start, that is why I’m in it! Come join us, Ladies! Click here Summer Sizzler if you are interested.

Ok, so now about our recipe for today, Smoked Barbecue Chicken. Special thanks to my husband Troy for all sorts of help with this Tasty Tuesday. Troy has been a fan of cooking with a smoker for about 5-6 years now. So on our patio we have both a smoker and a gas grill. I asked Troy if he would help me with a post about smoking chicken as we do this quite a bit and it is really tasty and easy!

And… Father’s Day is right around the corner, and some of you might be considering a smoker as a gift! We are not professionals, but we can share what we know!

Basically smokers come in 3 different kinds: gas, charcoal, and electric. Ours is electric, and we’ve had it about 5 years. It’s a little rough, but it still works!

We went over to Lowe’s to check out the latest in smokers. Not to buy, just looking.

They generally have racks like this that you can cook on. See below, the box on the lower right is where you would put the chips.

These are the chips Troy prefers, Hickory. They also come in Apple, Peach, Cherry, Oak, Pecan, Maple, and Mesquite.

If you are considering purchasing a smoker, I can tell you the thing Troy likes about the electric smoker is that you have control over the heat. You don’t have to constantly monitor the fire. However, everyone is different. Some people will only use the charcoal smokers, etc. It’s really all about what fits your preference.

So now let’s begin with today’s recipe! Just 3 little ingredients!

Ingredients:

  • 1 Large Pack of Chicken Thighs (this one has 10 pieces)
  • BBQ Rub (we like Billy Bones in the green label)
  • BBQ Sauce (we like KC Masterpiece)

Begin by warming up your smoker. You can put the smoking wood chips in now. When the smoker begins to smoke, (smoke coming out of the smoker) you will know its ready for the meat.

Wash your chicken pieces, and remove the skin. Please note this is not absolutely necessary, but skin is tricky to cook in a smoker, and it adds calories, so we usually take the skin off and discard it.

Now season the chicken with your rub. First one side, then the other.

When the heat on the smoker thermostat reads at least 200°, carefully put the chicken on the rack in the smoker.

And place inside the smoker.

Close the door, and you should begin to see smoke.

You are going to want to turn the meat every 30 minutes for about 2 hours. You will know the chicken is done when you select a larger piece, slice into it, and the juices run clear.

Oh doesn’t that look yummy? Now it’s time to sauce it up! Cook 2 minutes and flip it and sauce up the other side and cook 2 more minutes.

And Voila!

Three ingredients. So simple. So good!

I must confess, it is really difficult to have self control taking pictures when the smell of that chicken is just wafting through the kitchen!

You are going to need napkins for this one!

I can’t take it! Give me a plate, please!

Load that plate up!

Corn on the cob, watermelon, salad and dinner rolls, everything a barbecue needs.

Pull up a chair, my friend!

What is it about barbecue that we love so much? Well, for one, it simply tastes fantastic! But it’s more than that. From sea to shining sea, Americans have loved their barbecue. Something about standing around a grill, with neighbors and an icy cold drink talking grilling strategies just seems to melt down any barriers and break the ice. We have decades of good memories, warm weather, blue skies, and laughter associated with barbecue. It stirs up something pleasant, bonding, a very good common ground.

We need things like that in our lives. They help stir up such feelings of gratitude for life, for the sunshine, the beauty of summer and the gift of relationship. And if you have a stack of paper plates, you can keep serving it up and inviting more and more to the backyard for barbecue! There is something powerful when people come together and share a meal, and the bond of friendship!

I hope you have a fantastic week! I’ll be back Friday for another Fashion Friday.

Love Always,

Amy

  1. OMG…that chicken looks amazing. My hubby was vacillating on whether to get a smoke a couple of years ago. But he rarely even BBQs, so we didn’t at the time. After seeing this though….
