Tasty Tuesday and Savory Seasoned Potatoes

Hi there! It’s another Tasty Tuesday, and today we have a delicious side dish you can enjoy year round! Savory Seasoned Potatoes!

Potatoes are such a great side dish as they don’t seem to aggravate many stomach issues. They fill you up, they are inexpensive, and you can serve them so many ways! So today we are sharing a version of potatoes my husband likes to prepare (we all enjoy cooking in our house!)

Many thanks to my husband Troy for his help with this post! He cooked the potatoes and I photographed it! So without further ado, let’s begin!

Ingredients:

  • 2-3 lbs red skin potatoes
  • 1/2 cup olive oil (can drizzle more later if desired)
  • Spices: (please add or subtract to taste on all of the following spices- if you have fresh on hand, by all means use them! Yum!)
  • 1 tsp dried rosemary
  • 1 tsp garlic powder or 2 cloves of garlic, minced
  • 1 tsp onion powder
  • 1 tsp celery salt
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • salt and pepper to taste
  • 1/2 stick of butter

Preheat the oven to 400°. Wash/scrub the potatoes, but do not peel them.

Cut the potatoes in half and then slice in wedges/chunks as below.

Pour olive oil in small bowl.

Add in your spices.

Move potato pieces to a large bowl and drizzle the spices over the potatoes. Stir to coat them in the oil and spices.

Transfer the potatoes to a 9 x 13. Sprinkle with salt and pepper lightly (you can add more later)

Cover with tin foil, and bake in oven for 30 minutes, stopping every 15 minutes to stir the potatoes around to avoid them sticking to the bottom of the pan.

Cooking nicely!

Test the potatoes with a fork. When they begin to feel tender, take your 1/2 stick of butter, slice in several pats, and arrange on the potatoes.

Bake uncovered another 15-30 minutes or until soft and slightly browned. And you are all set!

These potatoes are so savory and absolutely delicious! They make a perfect side dish to poultry, beef, just about anything! We had ours with steak.

This is such an easy way to jazz up your potatoes!

The seasonings make them very satisfying. You could serve them with sour cream and scallions, maybe even bacon if you like, but we find them absolutely lovely the way they are!

It’s just an easy twist on a flagship side dish!

The potatoes are velvety fork tender and melt in your mouth!

You won’t go wrong, this is a show stopper potato!

What is it we love about potatoes? Well, they are so easily transformed into all sorts of delicious ways to serve them! And they settle well, and they fill you up! From French fries to mashed potatoes, hash browns, a loaded up baked potato and everything in between. When I see that potato on the table I heave a sigh of relief because no matter what else is on the table, I know I can eat the potato! Potatoes are our friends! We can count on them! Figures they would grow beneath the soil, a “salt of the earth” kind of food!

We all have friends that are solid like that! I love those people in our lives who never let us down. We can trust them with anything, and we know they will be true blue! It’s nice to be that kind of person for others as well. Things may be out of control in life but one look in their eyes and you know it’s going to be ok. There must be a special blessing in Heaven for those solid citizens who are a trusted friend to others. It’s nice to let them know how much they mean to us, too (but the really cool thing is, their friendship and reliability does not depend on accolades!) If that is you, my friend, I salute you! I’m looking to be that kind of person because in my life, they are priceless! (you dear ones know who you are!) So here’s to the solid citizens who we can go to anytime with anything no matter what, whether friend or family, lets lift them up, and maybe even invite them over for a really nice meal including some savory seasoned potatoes!

  1. You’re going to laugh Amy, because we JUST bought red potatoes at the store last week. Rob grilled a couple last night, but there’s still a ton left. I think I’ll have to make this now!!
