Tasty Tuesday and Smoked Ribs

Hi Friends! It’s another Tasty Tuesday and oh do we have a yummy and easy recipe!Smoked Ribs! If you remember, at the end of May we did a post on Smoked Chicken. My husband has become a master of the smoker, and we eat some fantastic smoked meat meals year round. And one of our absolute favorites is smoked ribs!

The pictures this week were taken by yours truly… and all of us here at “Chez Kennedy” enjoyed this tasty meal. And we want to share it with you! So without further ado, lets begin!

Just 3 ingredients! 

  • Ribs – we did one meaty slab of pork loin back ribs, 3.5 lbs – this fed 4 of us with other fixings
  • Barbecue Sauce (we use KC Masterpiece)
  • Billy Bones BBQ Rub (we use the “Competition Rub” flavor- green label)

Begin by warming up the smoker and putting the chips in. We cook at about 300°

Place the slab of ribs on a cookie sheet covered with tin foil.

Sprinkle the “rub” down one side of the ribs and pat into the meat.

Flip the ribs over and sprinkle rub on the other side, patting into the meat.

You will know the smoker is ready when it begins to smoke. Place the ribs on one of the racks.

These will need to cook about 3 hours total, but it varies based on the quantity of meat you are cooking, and if its really hot or cold outside. Turn the meat every 30 minutes.

Hold off on the barbecue sauce until you begin to see the bones peek out all along the slab.

At this point brush the underside face up with the bbq sauce, cook another 3-4 minutes,

Flip them over, put sauce on the other side and cook another 3-5 minutes.

Time to cut those ribs!

Just cut in between the bones, it should cut pretty easily.

Gather some plates, maybe some lemonade and your favorite sides and rally the troops to give thanks before you begin!

Oh yeah! This is perfection! Ribs, baked taters, watermelon, corn on the cob and buttery garlic bread!

Its all about that first bite… magic!

Ok… no need for the fork anymore!

Dig in… but be sure you save room for 2nds… and 3rds… and dessert!

Goodness this is making me hungry!

The sauce on the ribs has carmelized to perfection! Aaaahhhh! I can’t take it anymore!

That’s what I like to see… watermelon piled high!

There is something so nostalgic about barbecue. It is so simple,  its not expensive, its delicious and its a cooking experience that has gone on for generations. There is something really touching about that, thinking of families down through the years enjoying cooking out of doors under a blue sky with a delicious aroma wafting through the air!  It’s more than a meal. Its an event.

And then as you gather to say grace, one hand taking the hand of the next person, and then the next and the next, a circle is formed. And then, something amazing happens. You look around that circle and you realize just how perfect it is that we all are standing here together giving thanks. Every face you lay eyes on in the circle means so much to you and in that moment a flood of love and thankfulness can just about take your breath away. A hush for a few exquisite seconds, because you know how incredibly blessed you are, and you humbly bow your head and the thankfulness to God just flows from hand to hand and heart to heart! And it doesn’t get much better than that.
