Tasty Tuesday Breakfast Scramble

Hello! Happy Tuesday, my friend! Today we have a super hearty breakfast dish to share! It’s one we love in this house! A Breakfast Scramble!

We are fans of a big hearty breakfast on the weekends so you can have some fuel to work with the rest of the day. My husband always says, “You can’t work like a horse if you eat like a bird!” And this dish will give you coal in the furnace for the day! Basically you are throwing all the makings of a great breakfast together in one dish! We have chosen the flavors we like below but remember you have your own great ideas of what makes a great breakfast! So if you like mushrooms or tomatoes in your skillet, by all means, throw them in!

So without further ado, let’s begin!

Ingredients:

  • 1 lb ground sausage (we use Bob Evans)
  • 6 eggs
  • 6 potatoes (medium size)
  • 1/2 large onion diced (more or less to taste)
  • 1/2 green pepper diced (more or less to taste)
  • 1 1/2 cups of shredded cheddar
  • 1/3 cup olive oil
  • 1/2 stick of butter
  • non stick cooking spray
  • Lawrey’s Seasoning Salt
  • Salt
  • Pepper

Begin by washing the potatoes and slicing in half, length wise. Place in the microwave on high for about 5 minutes to soften them up (will speed up the cooking later)

Slice them in quarters and then cut across making bite size slices.

Add your 1/3 c olive oil and 2 Tbsp butter to skillet, heat on medium high.

Add the potatoes and let them simmer, stirring occasionally. Lightly salt and pepper them.

These will take approximately 20 minutes, watching for them to get golden brown.

Meanwhile, in a separate skillet, cook the sausage, using a spatula to break it up.

Chop up your onion and green pepper while the sausage and potatoes are cooking.

Add about 1 Tbsp butter to a small skillet and saute the onions and green peppers. Yum!

When the potatoes look almost to perfection (golden) sprinkle them with the Lawrey’s Seasoning, and gently stir. Turn the potatoes and cook for another minute or two.

Remove potatoes and drain on platter covered with paper towel. Wipe this pan to cook eggs in.

In a bowl, add your 6 eggs. Whisk until frothy. We didn’t add milk, but you could add a splash if you like.

Spray your skillet with cooking spray, and on medium heat, add your scrambled eggs.

Cook, turning with spatula and breaking up the eggs.

When the eggs are cooked, add in the onions and green pepper.

Add in the sausage.

Add in the potatoes.

Now gently stir until well combined.

Now you can serve it up.

Provide catsup, and hot sauce if wanted. And add a handful of shredded cheese on top while it’s piping hot. We serve it with toast.

Just what a hungry boy or girl needs!

A cup of juice, some fruit, maybe a sweet treat and you have all the fixings for a fantastic breakfast!

It’s really a throw together kind of meal, you add in what you like from the items you have on hand. And while you are throwing it all in the skillet, it may not look the prettiest but it is good!

Making a skillet scramble like this reminds me a little of life. You have all kinds of things thrown in there, both good and bad. Maybe you’ve taken a few wrong turns in life. Or a few super great turns. And maybe you’ve just hit some really hard luck. And it may look a little messy, but in reality it’s a “Beautiful Mess”!

The thing is, these things in life help make us strong. They teach us problem solving. The challenge us and refine us. They teach us to never ever give up. And they become part of the tapestry of our lives, shaping us into who we are today. Strong and hearty.

  1. This looks so yummy…and familiar. We do a similar one that everyone loves! I can’t do cheese anymore, so I just make sure to leave that off mine. This kind of breakfast always reminds me of my kids and holidays.
