Tasty Tuesday and Decadent Chicken Salad

Hi Friends! It’s another Tasty Tuesday and I have just the dish to give you energy for wrapping gifts, or writing greeting cards, or to fuel up before a shopping trip! And it tastes fantastic! It’s Decadent Chicken Salad, and it’s so easy yet it tastes like a gourmet delicacy. You and your family will devour this salad in no time!

So without further ado, let’s begin!

Ingredients:

  • 1 Rotisserie Chicken
  • 1/2 Apple, chopped (I used honeycrisp)
  • Juice of half of a lemon
  • 1 cup of red seedless grapes, sliced
  • 1/2 onion, chopped
  • 3 stalks celery, chopped
  • 1/2 cup nuts (use either walnut pieces or sliced almonds)
  • 2 cups mayonaise
  • 2 Tbsp dijon mustard
  • 1 tsp parsley
  • 2 tsp sea salt
  • Cracked pepper to taste

Remove the skin from the rotisserie chicken and take the meat off the bones. Discard skin and bones.

Slice your red seedless grapes.

Chop your apple, onion, and celery into nice small pieces.

In a small bowl, add your mayonaisse, mustard and lemon juice.

Add in your sea salt, pepper and parsley.

You can also add in dill, it is fantastic with fresh dill.

In a large bowl, add your chicken.

Next add in your apple, onion, celery, grapes and nuts.

Gently combine.

Now add your dressing on top.

Using a large spoon or spatula, stir so that all the salad is coated with the dressing. Chill for about an hour.

That is it! Wasn’t that easy? Let’s serve it up! I put out a variety of ways to enjoy it.

Croissants, crackers, a sweet bread… and lots of nice trimmings like fruit and veggies and cheese.

Oh yes. Now that is how you do it!

Pardon me while I drool on the keyboard, again!

You can also serve it up on a bed of lettuce. Nice and simple!

You could also serve it on a sweet bread, here I have a local favorite, Michigan Cherry Walnut bread. Yum!

I got kind of fancy and put some pomegranate seeds on the fruit. Ooh la la!

One thing is certain, with a spread like this, you and your family and guests will feel like they have received the royal treatment! And it’s not that hard to make! Win!

And it tastes so good, and will put the coal in your furnace you need to keep up with all the holiday happenings!

I want to wish you a Merry Christmas this week as you are making plans and putting finishing touches on your holiday traditions. Isn’t Christmas just a wonderful time of year? I think we all become a child again at Christmas… only a miracle could do that for the world. It leaves us all breathless with hope and belief. Goodness what a gift this life is!
