Tasty Tuesday Easy Peanut Butter Chocolate Chip Cookies

Hi friends! I have a fresh plate of cookies to share! It’s been so long since I did a dessert, so I thought I would bake us up some cookies!

I had been wanting to bake some up that have lots of the ingredients I love in a cookie, in fact, I am warmly referring to them as Kitchen Sink cookies because they have everything but the Kitchen Sink in them! Honestly, who doesn’t love a fresh baked cookie! So I baked them up, and they were literally flying off the plate before I could even photograph them! So please know the recipe baked up more cookies than what you will see! They were quality control cookies! So now, let’s begin!

Ingredients:

  • 1 1/2 sticks of butter, softened
  • 3/4 cup white sugar
  • 1/3 + 2 Tbsp brown sugar
  • 2 eggs
  • 3/4 cup of peanut butter (either crunchy or smooth, your preference)
  • 2 tsp vanilla
  • 1 cup flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup oats 
  • 6 oz chocolate chips (1/2 bag of the 12 oz)
  • 6 oz butterscotch chips

Preheat the oven to 350°.

Place softened butter, brown sugar and white sugar together in large bowl and mix together.

Add in the eggs, peanut butter and vanilla, and using a beater, beat until combined.

In a separate bowl, combine the flour, salt and baking soda, stir.

Add the flour mixture to the wet ingredients and mix until combined.

Stir in your chips.

As the baker, you have the right and maybe even the duty to sneak a little tiny tasty test of  the dough, another form of quality control.

I used heaping rounded tsps of dough to go on the cookie sheets. Note I used parchment paper on the cookie sheets, and I think it really works!

Bake at 350° for about 8-10 minutes, or until the edges are just starting to get golden brown. Allow 5 minutes for cookies to cool before transferring cookies to the cooling rack.

Notice when you bake using the parchment paper, it’s so easy to move it to a cooling rack!

And just like that… it’s cookie time!

Now at this house, fresh baked cookies go pretty fast. This plate would be almost doubled if we hadn’t had so many taste testers! It’s been too long since we baked cookies in this house, Hah! All of us are watching what we eat… but we took a little break today!

You definitely want some icy cold milk.

And or some steaming hot coffee!

They bake up so nice and soft and chewy!

It makes plenty, so invite a friend or two!

There is something so appealing to everyone about fresh baked cookies! Imagine you come home and you are tired from a long day, maybe even a rough day at work. The world has not been very friendly. And it’s cold and raining. And you walk exhausted physically and emotionally in the house to the most heavenly smell of rich sweet goodness! You almost can’t believe it’s true! And then your eyes hit that plate of fresh hot cookies!

“Can I have one?” you ask, and the dear one who baked them smiles and says, “Of course! I baked them for you!” And a smile crosses your face as big as Texas! And you heap a bunch of hot cookies on a plate, pour a big ole icy glass of milk and you sit down and rest your weary soul basking in the aroma of cookies and a feeling that you are most assuredly loved! Nothing that happened today can touch you now. You are the luckiest person alive because you have a plate of fresh, hot cookies! And they are exquisite!

That is how you can make someone feel if you bake them some cookies! It can be for anyone! Maybe a neighbor or your brother or sister or parents or kids. Maybe for a friend! Maybe go extreme and make it a way to meet someone! Maybe text a friend and tell them you just baked hot cookies and would they like to come over! The thing is, it doesn’t take much effort and you can simply transform the worst day ever into the best day ever! That is powerful stuff!
