Tasty Tuesday and Easy Herb Chicken

Hi Friends! It’s another Tasty Tuesday and I’m sharing a super easy and delicious dish for those cold winter nights! Easy Herb Chicken!

This is a dish my family loves, and it has the house smelling so good you can hardly wait till you hear the words, “Dinner’s Ready!” Then, watch out for the stampede!

It has all these savory flavors and aromas, and honestly the sauce is just so good, you will drift away in a flavor canoe! So without further ado, let’s get started!

Ingredients

Chicken

  • 3 lbs Chicken breast (I get the thinner cuts as it cooks a little faster and more evenly)
  • 1 1/2 Tbsp olive oil
  • 1 1/2 Tbsp butter
  • 3 tsp minced garlic (or 2 larger cloves minced)
  • 1 tsp dried oregano
  • salt and pepper

Sauce

  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • 4 tsp minced garlic
  • 3 Tbsp flour
  • 4 cups milk
  • 2 tsp dried oregano
  • 1/4 cup dried basil (or to taste)
  • salt and pepper

Begin by making the seasoning for the chicken. In a large bowl, put your 3 tsp minced garlic, 1 tsp oregano and salt and pepper to taste.

Add in the uncooked chicken pieces and rub the seasonings into the meat till it is fairly dispersed.

You just keep turning the chicken and massage the herbs into it.

That looks good! Set chicken aside.

In a very large skillet, melt the butter and olive oil over medium heat.

Add in the chicken, cooking about 4 minutes per side, turning and continue this cooking until done.

When the chicken is no longer pink on the inside it is done.

Transfer the chicken to a bowl or plate. You will use the same skillet to make the sauce. 

Take the 2 Tbsp butter and 2 Tbsp olive oil remaining and add to skillet, keeping the bits and seasoning in the pan that were there.

Add the garlic and let it saute for a minute or so.

Add the flour. And slowly stir in the milk.

Allow to simmer, and stir to keep from burning.

The sauce should thicken. Add in the oregano, basil, salt and pepper.

Then add the chicken breast back into the pan. Let it simmer another couple of minutes. Then turn off the heat. Serve hot.

And Voila! It’s ready! We chose to serve ours over white rice.

You have plenty of sauce to add to the top of your rice if you wish. This sauce is so good!

Ok confession, I used Hawaiian rolls with this… total win! Honestly they were so good with this sauce!

There is something so comforting about a warm herbed chicken dish on a cold night! The fragrance of the garlic and chicken fills the house and smells so good! Have you ever noticed how certain herbs just work so beautifully together with certain foods? It’s like they were almost created for each other! Kind of like families!

Sometimes I marvel at how we are all so perfectly placed together in this world. I smile and think what a blessing it is that I grew up in the family I did. Believe me, with 6 kids, my parents could have written a whole series of books on the things that happened in the years they raised us kids. Goodness, the things we got in to!  Some chapters would make you laugh, some would make you weep. Some would scare you to death and some would flood your heart with joy. But one thing is certain, we were made to be together.

Fast forward to my family today, and it is the same thing. We have 2 sons, as different as night and day, and yet we wouldn’t change a thing! We have gone through peaks and valleys and I’m sure that will continue, but I know that I know that I know that we were placed together at this point in time for a reason, and it is a beautiful thing!

I feel the same about connecting with friends whether face to face or over cyberspace. We were meant to do this journey together. Aren’t you so glad when you stop and think of what a blessing it is to be connected with so many lovely people in our lifetime? I am so grateful for each friend and family member! I’m grateful for the precious moments of our lives, for the paths I have crossed in days gone by and for the ones yet ahead. Like a beautiful aroma of herbs that have simmered on the stove, this life is a blessing, a comfort and exquisitely delicious!
