Tasty Tuesday and Easy Tortilla Soup

Hi friends! It’s another Tasty Tuesday and we have a super easy and tasty Tortilla Soup to share today!

We love soup at our house this time of year, and this tortilla soup is so good it’s like having dessert for your main course! We first made this maybe 10 years ago and every drop got eaten up! It is so flavorful and satiating, and yet not too spicy at all!

So without further ado, let’s begin! And I must thank my husband Troy and my son Jake for working with me on this post. I am recuperating from a broken ankle, so they did most of the work that requires standing (which is a lot!) I sat at the table and cut things that needed to be cut. So it was a true family effort! Many of our meals are! We all like to cook, it’s fun!

Ingredients:

  • 3 cups cooked, shredded chicken  (or the meat from 1 rotisserie chicken from the store, discard skin & bones, shred or pull apart)
  • 8 oz Velveeta Cheese, cubed
  • 1 can Rotel Tomatoes w green chilis
  • 3 cups Chicken Broth
  • 1 cup Milk
  • 1/4 Butter
  • 1/4 cup Flour
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • Salt & Pepper
  • Shredded Colby Jack Cheese
  • Tortilla Chips

In a large pot, melt the butter over medium heat. Stir in the flour, and continue stirring as it cooks for about 3 minutes.

Slowly mix in the chicken broth a little at a time, stirring constantly. Then add in the milk, continuing to stir. Reduce the heat to low and add the Velveeta, cut in cubes. Stir until melted.

Add in the Rotel tomatoes and chicken and spices. Stir and heat through. Note, I got at least 3 cups of chicken from one of the rotisserie chickens at Kroger. For dishes like this, it is such a time saver!

Once you have heated it through, you are good to go! Just ladle it in a dish, and add a handful of your shredded cheese.

This is absolutely heavenly! If you like it spicier, you can add some cayenne or hot sauce. I also like a dollop of sour cream on mine. Then top it off with some tortilla chips, you can crush them if you like.

We served it with guacamole, pico de gallo, fresh pineapple and cornbread. The pico was absolutely awesome sprinkled on top of the soup!

This is so good! I would say it feeds 4-6 depending on how hungry everyone is. We had 3 eating, and had enough for 2 more bowls the next day. For the record, it tastes as good or better on day 2. A good indicator is when they scrape the bowl with their spoon to get every last drop!

I was thinking today about how there just seems to be a certain sense of comfort and affirmation in a warm bowl of soup. Even in the way we eat soup, there is comfort, like getting a hug from the inside out and knowing everything is going to be ok. Each spoonful seems to trickle down and brings us warmth, healing and strength. At anytime, it could be anyone around your table that needs that message more than you know.

A call to the table, whether it’s 5 people or 2 or even just you, the table is the place we come to replenish what the world has taken from us that day. The cheerful bowls and spoons and plates bid you welcome. Chairs scooch in, and a familiar circle of warmth is formed. Everyone knows this is a pleasing task, maybe the only happy task that day. To refuel in the presence of the only ones who can replenish the soul and ground you once again. Like hitting a reset button to get you back on track, to know who you really are, not what the day’s activities tell you. On our best days and our toughest days, here at the table we can find the sustenance we need. And when that wave of love and thankfulness overcomes you for golden moments like this, you gather hands and give thanks with a truly grateful heart.
