Tasty Tuesday and Garlic Rosemary Chicken

Hi Friends! It’s another Tasty Tuesday! And we have a tasty and simple garlic rosemary chicken.

There is nothing like chicken flavored with herbs to satiate a hungry tummy! And there are so many wonderful combinations you can use with chicken! As we are trying to eat a little healthier in our house, chicken is a great choice for us and we serve it quite a bit in our home!

This recipe has a super easy marinade that creates a delicious chicken dinner!

Now you may or may not have heard I took a fall on the ice a little over a week ago. I broke my ankle rather severely requiring surgery and so my husband has been helping with the cooking and pictures. So in this week’s post, all the thanks goes to my dear husband who has taken such good care of me! So without further ado, let’s begin!

Ingredients:

  • 4 boneless skinless chicken breast halves
  • 4 tsp minced garlic 
  • 2 tsp crushed dried rosemary
  • 1 1/2 Tbsp Dijon Mustard
  • 3 Tbsp Olive Oil
  • 1 1/2 Tbsp lemon juice (we used fresh squeezed)
  • A couple good shakes of black pepper
  • A couple good shakes of kosher salt

Start with adding the garlic in a mixing bowl.

Add the oil.

Add the rosemary, lemon juice, dijon mustard, salt and pepper. Stir together.

In a large ziplock bag, add the pieces of chicken. Pour the marinade over the chicken. Massage into the chicken so that all pieces are coated. Let it set for 30 minutes.

Preheat the grill. Once the grill is hot, put the chicken on and cook about 3 minutes per side until the juices run clear.

And voila! Doesn’t that look delicious?

We are pretty much guaranteed no leftovers with this combination! We kept it simple on the sides with some green beans and rice and dinner rolls.

It has a very light yet flavorful taste, with a note of the rosemary that comes through.

It tastes fantastic and is savory yet mild. That is a winner winner chicken dinner!

So since I took my fall, I have been rather dependent on the help of others (this is something totally new to me). I can only stand on my good leg for a short few minutes because the bad leg needs elevating. People have been so kind to me. My husband and son have set me up with the very best floor plan on the main floor for me to navigate. They make sure I have food and drink and medicine, they help with putting pillows under my cast, they talk with me, they really are in the trenches helping me. I cannot thank them enough. My sister that is a nurse comes by and makes sure things are staying on track. My brother dropped in twice now to check on me. My other sister calls and texts me all the time. My cousin from California dropped by (what a nice surprise!) My parents, siblings, and in-laws call and check up on me. Goodness my hairdresser friend came by and washed and styled my hair for me! Then there are so many dear well wishes I’ve gotten from people with phone calls and cards, notes on the computer/texts  and flowers and candy! And some dear friends have brought meals. It just means so much! It really does “enCourage” you with every little touch!

When you provide a meal for someone else, whether they live in your house or you take it to a friend, you are blessing them more than you may ever know. Your efforts start from a caring in your heart. And I think that is what makes the meal the most delicious is that someone cared enough to provide a meal for them. It kind of goes back to our most basic needs, love and nurturing. I have a few younger friends having babies this month. Those little ones will be completely dependent on their parents to feed and care for them. And the greatest hunger they have is love. Each time we have the honor of preparing a meal for someone, that is in essence what we are providing. You are a dear protector and caregiver for the precious ones in your circle! That is such a worthy calling! I’m looking forward when I can get back in the cooking saddle again!
