Tasty Tuesday and Easy Creamy Cucumber Salad

Hi Friends! It’s another Tasty Tuesday! And we are taking it easy with

Easy Creamy Cucumber Salad! My husband Troy’s mother has made this salad for years at family meals, and it is definitely a crowd favorite! Going into summer it is a great go to for a salad bursting with flavor, and really easy to put together!

Many thanks to my husband Troy who has been such a huge help in so many ways since I broke my ankle. He helped with the prep and photos for this week’s recipe. We are a very good team together! So without further ado, let’s begin!

Ingredients:

  • 4 cups of skinned thinly sliced cucumber (we used 2 English Cucumbers)
  • 1 cup thinly sliced red onion (you can substitute white onion as well)
  • 1/2 cup of sour cream
  • 2 Tbsp white vinegar
  • 1 tsp sugar
  • 2-3 Tbsp chopped fresh dill (to your taste- note, if using dried dill, start w 1 tsp)
  • salt (approx 1 Tbsp, but see in recipe directions)

Begin by peeling 2 cucumbers, and then very thinly slicing the cucumbers. I like the English cucumbers, they are a little narrower in circumference, and have a little milder flavor.  This is a mandolin slicer. You want the slices really thin. There are 4 settings on mine, and we used the second thinnest setting.

This makes the slicing go so fast. It’s even kind of fun. Of course you can also cut by hand. Just always be careful you keep your fingers back from that blade.

Sprinkle lightly some salt over the cucumbers.

I use my hands and toss the cucumbers around so they all get a little salt on them. Then sprinkle lightly once more with salt and toss again.

Using the mandolin (or by hand) slice a red onion in thin slices to equal 1 cup.

Remove the small yellow center of the onion slices, and cut the onion rings in half. Add the onions on top of the cucumbers.

To chop the dill, pull the smaller stems from the thick center stem. Discard the center stem and chop the remaining foliage.

In a separate medium bowl, combine sour cream, vinegar, sugar and chopped dill (reserve a little dill for garnish on top at end)

Add the cucumber and onions to the dressing, and toss to coat. Yum! This is so tasty!

Once it is fully coated, refrigerate for 2 hours.

Oh my word! It’s ready!

When I was little, I remember my mom called this her “oom-ahh” salad because it was so good, she would say “oooomm… ahhhh”, great marketing! It really is so good, and so easy!

We garnish with just a little more fresh chopped dill before we serve it.

It is going to get wiped out… just saying.

Easter Sunday Dinner…

Monday ham sandwiches and salad, and an admiring fan.

This is such a nice salad to add in to your “salad repertoire”. And it seems to go with everything! It’s such a tasty side, it’s always a good idea! I’ve heard it called “German Cucumber Salad”, “Hungarian Cucumber Salad”, Creamy Cucumber Salad, Dill Cucumber Salad… the list goes on. But it is definitely a favorite! It’s the perfect summer salad and a great way to use up cucumbers from your garden if you grow them! From BBQ’s to potlucks, this is the perfect answer to “what should I bring”?

There is nothing like a really good meal to bring people together! For our Easter dinner  everyone wanted to bring something to contribute to the meal. Not simply to be polite, but because they wanted to soak in that blessing of bringing something that they share with good friends and family. And the meal, whatever the occasion, becomes an event to look forward to.

I have always marveled at the divine plan that eating is a necessity for humans to survive, and that it makes you feel so much better after you’ve eaten. It becomes the perfect community activity, and people can bring a dish to share. I love the idea of sitting at a long table together, sharing that table surface. I love that we scoop the salad from a bowl meant for everyone to be able to share from. The bread basket gets passed, one holds the basket for the next person to take a roll from. It is serving and being served all at the same time!

From fine china to paper plates, the laughter and smiles and feeling of love and friendship are the perfect compliment to the meal. Our conversations meander like a river. From the weather to what great grandma used to serve 30 years ago, to laughing because someone just accidentally flung jello off of their spoon! And every meal is a brand new edition of an unpredictable adventure and memory maker! You fill your heart at the same time you fill your hungry tummy!
