Tasty Tuesday and a Potato Dish Cooked in the Smoker

Hi Friends! It’s another Tasty Tuesday! And today we have a smoky twist on potatoes!We love using the smoker at our house, and we just replaced our previous smoker, so I thought it would be great to try a recipe using the smoker! Father’s Day is coming up and a smoker would make a great gift! Here is the one we just purchased. Ours came from Lowe’s. It had great reviews, and my husband says it really does a nice job. The Masterbuilt 35B 1500 Watt Electric Smoker (ours was $179). Our previous one had less wattage and it was difficult to always reach the temps we needed.

So we smoked potatoes along with chicken for this meal. That is the recipe we are sharing today. Potatoes can be so flavorful from the smoker! Now this recipe would also work in the oven if you don’t have a smoker. Without further ado, let’s begin!

Ingredients:

  • 2 lbs red skin potatoes
  • 1 pack of bacon (note if you prefer to make this vegetarian, you can skip the bacon)
  • 1 medium onion
  • 1 bunch of green onions
  • 1/3 cup chopped parsley
  • 1/4 cup olive oil
  • parmesan
  • garlic salt
  • 2 tsp crushed garlic
  • cracked pepper
  • Kosher salt

Cook your bacon, drain on paper towels. Reserve the liquid bacon fat.

Wash and then cut your potatoes in quarters or bite size pieces.

Coarsely cut one medium onion.

Add to the potatoes, along with the chopped garlic. Generously season with the kosher salt and pepper and garlic salt.

Drizzle with the olive oil, you could also add 3 Tbsp bacon fat (from the bacon you just cooked) *not necessary if you prefer no bacon) and add the chopped parsley. Toss so all of it is coated.

Now pour onto a baking dish or cookie sheet (make sure it fits in your smoker first). Ours needed one just a little smaller than a cookie sheet.

Then place in the smoker. Cook at 325° for about an hour, gently stir, then test the tenderness of the potato with a fork. We cooked ours about an hour and a half to get them nice and soft, but yours may cook faster so keep an eye on them. Ours took about as long as the chicken took.

Once it is done, give it another good dusting with garlic salt, add on some parmesan, bacon, and chopped green onion. Mmmm! Now if you don’t like onions, you could of course skip them.

Now let’s serve it up! Look how beautiful that chicken turned out! Troy brushed some barbecue sauce on it about 15 minutes before it was done.

Oh yes! That is perfect! There is so much flavor in those potatoes! And the chicken is so juicy!

Friends, these potatoes got destroyed… so so good! That added garlic salt is really a game changer!

We really enjoy the nights we use the smoker! It brings such a beautiful smoky fragrance to the table! Have you ever noticed the power of the aroma of good food? When you smell it, it activates hunger, but even more than that, I think it fills us with an overall feeling of joy and contentment and being cared for.

Food from the barbecue or smoker is special because it generally is accompanied with fun and the fresh outdoors. It can’t help but promote good feelings and relaxation. Like a mini vacation! Who wouldn’t want that after work on a midweek night? Turning off the technology and sitting outdoors enjoying a summer evening! I think that is good medicine!
