Tasty Tuesday and Bacon Wrapped Chicken

Hi friends! This week, we have Bacon Wrapped Chicken, so savory and delicious, and oh so easy! In our house, we love bacon! And oh what it does for the flavor when chicken is wrapped up in it! So without further ado, let’s begin!

Ingredients :

  • Chicken – boneless thighs or breast- we did 2 – 3 thighs/person
  • Bacon – if using thighs, 1 slice/piece; if breast, 2 slices/piece
  • Onion powder
  • Garlic powder
  • Lawrey’s Seasoning (optional)
  • Salt and pepper

Preheat the oven to 400°. Season both sides of chicken with a dusting of all the seasonings listed above. I made a few without the Lawrey’s for me. The guys in our house  love it.

Simply take a piece of bacon and wrap it around the chicken. Do not use thick bacon, as it might not get fully cooked. Bigger pieces of chicken may require a 2nd piece of bacon. Use the boneless chicken.

Use the higher rack. Bake for about 40 minutes and then use the broiler until the bacon gets nice and golden.

The house will smell heavenly! To test to see it is fully cooked, cut into the middle of one piece, the juices should be clear and the meat look fully cooked.

Voila! It’s that easy! Now there are plenty of ways to go more decadent with this recipe. You could add a thin layer of cream cheese under the bacon, maybe some grated cheese, you could bathe it in barbecue sauce- use your imagination! We are trying to cut back a bit so we went a little simpler and healthier.

We had fresh green beans, veggies and watermelon with it.

It makes a lovely lovely presentation with the bacon.

And when you cut into it you just know it’s going to be awesome!

It  is such a treat! It looks pretty fancy, it tastes amazing, it won’t break the budget, that is what I call winning!

It’s the little extra things we do in life for others that make it just burst with color and delight! When you bring home a bouquet of flowers to someone for no reason at all, or you leave a little note of encouragement for someone who could really use it. Or you notice when the lady next door got her hair done and you compliment her. Or when you just love on someone who has really messed up and could use a friend. That is the pure gold, the out of the blue surprise that may be just the thing that gives them a reason to lift their chin up and believe in themselves again. There is not a better investment than in our fellow man. And all it takes is a little bit of kindness and love. That is the best seasoning of all!
