Hi Friends! I hope you are well! Today I’m sharing a delicious and easy recipe for Buffalo Chicken Dip! There is nothing like a creamy, cheesy dip loaded with tender bits of chicken and a little kick to warm you up on a cold night! It’s like you have taken the magic of “hot wings” and made a delicious hot yummy dip out of it! This is a favorite of my son Jake, who likes to add hot sauce to pretty much everything! It’s hearty and really easy, a great appetizer for watching the game or on a cold night. So without further ado, let’s begin!
Preheat the oven to 350°
Ingredients:
- 1 Rotisserie Chicken (or 2 cups precooked chicken)
- 1 bar of cream cheese, softened (if you want to cut the heat (spiciness) a little more, add a 2nd bar)
- 1/2 cup of sour cream
- 1 small bag (10 oz) shredded Colby jack cheese
- 1/3 cup Frank’s Hot Sauce
- 1 tsp lemon juice
- 1/2 cup green onions (to serve with it)
- additional sour cream (to serve with it)
Remove the bones and skin from the chicken and shred the meat.
Spray a small oblong pan with cooking spray. My pan was a 7″ x 11″ 2 qt dish. It could be round or whatever you have around that capacity.
Measure your hot sauce, 1/3 cup.
Add your 1/3 cup hot sauce and 1 bar of cream cheese to a skillet and heat on low heat, stirring till the cream cheese melts in.
Add in 1/2 cup of sour cream, and stir.
Once melted, add in your 1 tsp lemon juice and stir. Then add in half your bag of shredded cheese.
Add in your chicken.
Stir until combined.
Pour into your oblong pan.
Cover with remaining shredded cheese.
Bake in oven until cheese on top is bubbly. Et Voila!
We used Frito Scoops and crisp veggies with ours.
And sour cream, and a small dish of chopped green onions to serve with it. Seriously so good!
You just have to try it with the sour cream and green onions! It’s ridiculous it’s so good! You can see how the Frito Scoops hold up to a hot hearty dip like this!

It is World Kindness Day as I type, (I like to think of every day as “Kindness Day”), but what could be kinder than treating the ones you love to something really tasty from your kitchen? We have so many memories built around food in our lives. I think it’s because there is such a bonding that happens when we “refuel” our hungry tummies together!
We come to the table hungry and maybe a little tired, but with a sparkle in our eyes because we are about to solve that problem! And the tantalizing aroma is making that message loud and clear! We gather with smiling faces, pause a moment for giving thanks, because oh are we grateful! And we dig in! There is laughter and cheerful chatter. We feel ourselves getting energized and our bodies feeling refreshed. And if you do that with “your team”, the ones you love, well that will most likely be the best part of everyone’s day! Great food and great company! Now that is always a winning formula!

Amy, This is one of my all time favorite dips at a tailgate party! It’s like buffalo wings without the mess! I’ve never made it myself, but will bookmark and add this to my list of “must haves” for the upcoming holiday party season!
