Tasty Tuesday and Easy Chicken Chili

Hi Friends! It’s another Tasty Tuesday and I have a recipe for super easy chicken chili!Nothing like a bowl of chili on a cold night! Piping hot, and a little bit of zip to warm you up! And this chicken chili is so simple! Why? Because you use the meat from a rotisserie chicken! It’s just that easy! It’s hearty and without the added fat you get with frying ground beef!

It’s simple-good. That is what I love about this and so many of the recipes on here. They are just simple-good.

So without further ado, let’s begin!

Ingredients:

  • 1 Rotisserie chicken (2 lb)
  • 2 14oz cans of diced tomatoes (undrained0
  • 1 can of kidney beans (undrained)
  • 2 packets of Chili-O
  • 1 medium onion, chopped
  • Red, Green, Yellow peppers, about 1/4 of each, diced
  • 1 clove garlic, finely minced
  • Shredded cheese, sour cream
  • 3Tbsp olive oil
  • Fritos Scoops

Add olive oil to large skillet, and then add the chopped onion and finely minced garlic. Saute the onions until slightly brown.

Chop your green, red and yellow peppers (no seeds)

Add to the pan with the onions and garlic. This smells so heavenly!

Add in your Chili-O seasoning.

Add in your canned tomatoes (undrained) and beans (undrained)

Shred the meat from the rotisserie chicken, no skin or bones. You can see there is quite a bit!

Add to your pan on the stove top.

Stir and heat through.

And that is all there is to it!

Just serve it up and offer shredded cheese, sour cream and the big crunchy Fritos Scoops!

Now it’s up to you! How do you like your chili? Well, let’s try a little shredded cheddar.

Now how about a dollop of sour cream? And maybe a few more onions? Perfect!

I’ve got my Fritos, I’ve got my chili, and some fruit!

Trust me! This is so hearty and delicious, and will really warm your pipes up on a cold night!

It’s the kind of food that is high on flavor and will stick to your ribs! And the best part, It’s so easy to make!

While I was taking these photos, the delicious smell was tempting me almost beyond what I could bear! Isn’t it a wonderful thing that we have these senses to help us enjoy life? The aroma, while good, is nothing compared to the taste…  the aroma is a sure sign of what is to come!

In this case, the flavors are bold, strong and mouthwatering! Kind of like life! And the best is yet to come for all of us! Isn’t that an exciting truth? We can live lives that are bold knowing that the very best lays ahead for each of us!
