Hi Friends! I hope you are staying warm this week!So many areas have lots of snow in the forecast! We are suppose to get some here this week!
Today I thought it would be fun to share an easy and tasty chicken quesadilla recipe. There is nothing quite like a hearty quesadilla! Comfort food at it’s finest! It’s got the whole enchilada… or should I say “Quesadilla”, Hah! A little saltiness, some cheese, some savory chicken, a little zesty zip, all packaged up in something that eats like a taco pizza! What is not to love about that?
As I was photographing this, it was literally flying off the plate to fans here in the house. It comes highly recommended by the men in the house. So without further ado, let’s begin!
Ingredients:
- 2 Tbsp Olive Oil
- 1 Tbsp butter
- 3 lbs boneless skinless chicken thighs or breast (I used thighs)
- 1 to 2 packets of taco seasoning or 3-4 Tbsp homemade taco seasoning.
- 3-4 Tbsp Vegetable Oil
- 2 Tbsp flour
- 2 cloves garlic
- 1 cup chicken stock
- salt & pepper
- 1 bag shredded cheddar cheese
- 1 can green enchilada sauce
- 1 pkg large tortillas
Cut the chicken into bite size pieces. Season lightly with salt and pepper.
Heat up the olive oil in large skillet. Add in your butter.
Add the meat and cook about 8 minutes or until the meat is no longer pink inside.
Add in your seasoning and flour. Stir to coat.
Add in your chicken stock and let it simmer about 5 more minutes. It will thicken up.
Oh this smells heavenly! Using a slotted spoon, move the meat to a separate bowl.
Then pour the remaining sauce into a small bowl. This can be used later on the quesadilla.
Have your scallions sliced, and your cheese ready.
In a clean skillet, drizzle a little vegetable oil in a large skillet and when hot, put a large tortilla in the pan. Quickly start to build your quesadilla.
You are moving fast so the tortilla doesn’t burn. Start by adding in some cheese and then meat. Then sprinkle on some scallions. Press some fresh garlic and add to the top.
Next, add on another layer of cheese.
Now add a top to the quesadilla. All the goodies are sandwiched inside. Now grab the largest spatulas you have and very carefully flip the quesadilla. Let it cook for about 4 minutes.
Now carefully using multiple spatulas, pull the quesadilla out of the pan and onto a large plate for cutting.
A pizza cutter works great or just a really sturdy kitchen knife. Cut it like cutting a pizza.
Look how pretty that is! Well let’s serve it up!

Ok… how about a little pico de gallo with that?
And some chips and salsa? Maybe a little fruit? A little blueberry or banana bread?
Wait a second! Now we’re down to half the quesadilla!
Someone is having a little salsa verde on theirs.
Ahhh! Here is a slice for me! Add a little pico.
Can I get a little sour cream with it?
Oh that is perfect! It’s like the perfect blend of comfort and party food! And the ingredients are just so fresh! And chock full of flavor! The other great thing is that it is relatively economical as well! That is what I call winning!
When you can provide such a pleasant dish to the people who are in your home, you are providing a precious gift! For the meal not only satiates the tummy, but the heart as well. When we can provide a feeling of something special and full of bright color and flavor in a meal to our loved ones, you just might be swooping in like a knight in shining armor, turning a very difficult day into a truly wonderful day. All it takes sometimes is one really positive thing to change everything! That is some powerful stuff! A game changer! We can be that person, that “knight” anytime we prepare a truly special dish! And special doesn’t have to be difficult. It just needs a little love and warmth and creativity. This chicken quesadilla surely fits the bill!

Amy, you have such a great way of presenting your recipes. I can hear you in my head and I always have a giggle as I scroll down the page. I might have a go at these, with a couple of tweaks. I’ll swap out the vegetable oil and use less cheese for me. Jayson will love the double cheese idea though!
