Tasty Tuesday and Oklahoma Dip

Hello friends! It’s time for another Tasty Tuesday, and today I’m sharing a classic!It’s Oklahoma Dip! A hot hearty dip with a little kick to it, a perfect snack for watching the game or for a party with family and friends!

This recipe has been in our family for years, along with many households across the map.It’s loaded with all the things the men in my house love! Meat and more meat, cheese and zippy tomatoes! The first time I had it, I was dating my husband Troy and his mother Joyce served this. Joyce is an exceptional cook, and this recipe was a favorite in their house. So thank you Joyce for introducing me to Oklahoma Dip! And without further ado, let’s begin!

Ingredients:

  • 2 lbs ground beef
  • 1 lb ground sausage
  • 2 lbs Velveeta Cheese
  • 1 medium onion, diced
  • 2 cans Rotel Tomatoes (Rotel tomatoes are a brand that has spicy green chilis included)
  • 1 bag Fritos Scoops

Begin by browning your ground beef in a large frying pan.

After the meat is cooked, you will need to drain the fat.

Now add  your chopped onion and cook a few more minutes.

Move this mixture into a crockpot on low. Now in the same frying pan, brown up the sausage.

Once it is thoroughly cooked, add it to the crockpot. Open your beautiful Velveeta cheese.

Slice it into cubes and add to your crockpot.  Add in the Rotel tomatoes as well.

With the crockpot on low, occasionally stir until the cheese is melted down, and incorporated.

It’s melting! It’s melting!

Et Voila!

A crockpot of hot hearty goodness! Now you can just serve it from the crockpot which is super easy. Or you can scoop some in a bowl and serve it that way.

Ok, I love using cute little bowls, so I had to serve it up this way!

The Fritos Scoops really is the best chip for this dip. It’s got the muscle for 3 pounds of meat!

For the record, fresh raw vegetables are awesome with this dip! My personal favorite is the celery. Their flavors seem to be a natural for each other!

Serve it up with some icy cold beverages of your choice because believe me, you are going to need it! It’s salty and has some kick! But oh so good!

Oh yes, and hot sauce for the ones who just need it kicked up a bit! Bam!

I also put out crackers and pretzels and salsa as well.

It is the perfect tailgate food! It’s indulgent and rich, and it really is a special treat for those occasions you want to do something a little more than the basics. This is the type of dip that is going to get your gang clutching their football jersey pearls in a gaspworthy moment! “You made this for me?” And then they step right up and help themselves!

When I think about tailgating or really any kind of party where people gather apart from the norm of life’s routines, I think of some of the greatest blessings we have as humans! We are coming together as a people and sharing food, and laughter and conversation. Many times gathered around a game on tv or on the field in front of us. It is building community, raising morale, creating traditions that are so comforting, and even just knowing this is being replicated in homes and at games all over the country brings a warmth and joy to the heart. This is a dip worthy of such an occasion. Our love for life and each other escalates the moment to a higher priority than what is on the scoreboard. This says “Life is good and I love spending time with you! So much that I am going to mark the moment with the Cadillac of Cheese Dips!” (Sorry if I’m being a little “cheesy”).

  1. I’ve served this before and you’re right! It really is the perfect tailgate dip. I’ve never thought about serving it with the crisp veggies. I bet that’s a delicious alternative to the salty chips. Yummy!

  2. How do you keep it warm at a tailgate? We always tailgate before and after the game. I have no way to keep it warm. Any suggestions

    1. Great question! Well, honestly if its hot in the crockpot, we just make that work as long as we can. But to sustain the heat longer, the simplest trick I’ve heard is to dedicate a cooler to being a “hot” cooler for holding the stuff you want to keep warm. Your heat source can be to heat a couple of bricks in your oven before you leave home, and then wrap them in towels and place them in the base of the cooler. Put your items you want to keep warm on top, and then another towel on top of the items to further insulate and close the cooler. I’ve also heard some folks invest in a power inverter.
