Tasty Tuesday and Glazed Chicken

Hi friends! It’s a chilly Tasty Tuesday!  And today I’m sharing a recipe from my husband Troy for  Glazed Chicken!

January has been a month in which we have been trying to get back on track with a healthy lifestyle. We are trying to eat much less red meat and chicken is our favorite go to these days. Everyone in our house likes to cook which makes it really fun. We often work together on meals. We all find cooking to be rather relaxing. This glazed chicken is really easy and has such great flavor! So without further ado, let’s begin!

Ingredients:

  • 3 lbs boneless, skinless chicken breast or thighs* (we prefer the boneless, skinless thighs)
  • 1 1/2 cups brown sugar
  • 2/3 cup soy sauce
  • 4 Tbsp bbq sauce
  • 2 Tbsp ketchup
  • pinch of dried red pepper flakes
  • 1 tsp minced garlic
  • 3 Tbsp lime juice
  • 2 Tbsp ginger

In a medium saucepan over medium heat, add your brown sugar, soy sauce, bbq sauce, ketchup, red pepper flakes, garlic, lime juice and ginger.

Mix all ingredients together. Bring all to a boil on stove top for 2 minutes.

Put chicken on the grill on a medium high flame. They will cook fast if its thin sliced. By the way, that is snow on the side of the grill. We grill all the time, year round!

Turn the chicken every minute or two. If its cold out, or if the meat is super thick, that will impact the amount of time it takes to cook it.

When they look like they are almost done, turn the heat down on the grill. Coat each piece with the glaze. Leave on for a minute and flip, coat the other side. Repeat a few times and when you bring them off the grill, you can reserve glaze to serve with the chicken table side.

You can see how pretty and golden the chicken becomes.

We also grilled some pineapple to serve with the chicken.

And voila! The chicken is ready to serve!

We served it with fluffy white rice.

There is something so magical about chicken cooked with a glaze that is spicy and sweet! It almost tastes like candy!

And when you pair it up with the grilled pineapple, it is just so good!

Pardon me while I drool on the keyboard! My husband had a hankering for chocolate cake too. I know… but after all, it was National Chocolate Cake Day. It was my patriotic duty!

It really is fun putting together a sweet and savory dish that is alive with flavor!  It looks gorgeous! It smells heavenly! And you just know from somewhere deep within that this is going to be absolutely delicious! And you find yourself wanting to shout at the top of your lungs, “Get in my belly!” Hah!

Isn’t the sense of taste and the yearning for food one of the best delights in life? It’s like a small picture of how amazing life can be! From the time we are born, no one has to teach us to be hungry! Think of it, isn’t that amazing? Any parents out there know that babies are going to let you know when they are hungry! That is one message we get loud and clear!

Meal time at our house is pretty funny. As things are simmering and the aroma is wafting through the air, everyone comes into the kitchen. Everything gets “taste tested” about a hundred times! It’s a miracle anything is left to serve on a plate! But its the anticipation and excitement that won’t hold us back! We all become amateur professionals in the kitchen, adding a little more of this and that, creating that masterpiece dish!

Such it is with life. We get a little taste for just how exciting and fun it can be! And we want more! And that is as it should be! As long as we are here on this earth we should be living life 110%! No holding back! Seeking adventure, ever learning, meeting people, laughing, having fun! It takes a little effort and sometimes we can get in a rut and miss some great opportunities. But oh how it is worth it to just get out there and live! Live every moment of every day savoring every single bite! And share it with those you love! Like any good meal, it takes some planning… but that is half the fun!

  2. I love grilled pineapple and bet it is delicious with this chicken dish. I really need to try some new recipes. I get sooo lazy. Maybe I will get my act together with this as I have all the ingredients. x
