Tasty Tuesday, Beefy V8 Soup, and Another Seat At The Table

Hi Friends! Its another Tasty Tuesday, and I am so thrilled to share with you a recipe my mom use to make when I was a little girl!

Beefy V8 Soup, aka Hamburger Soup! I know it might sound strange to think of hamburger in a soup, but this is just pure flavor town comfort soup! Its so good, and so easy, they will be lined up at your kitchen with their bowls saying, “Please, I want some more.”

The pictures this week were taken by me with some assistance from my dear husband Troy. Maribeth and I shopped today for more cute kitchen utensils and dishes. We went to Ikea. If you have never been to an Ikea, well you can easily spend a few hours there. Its huge! I know we all miss Maribeth, and she will be jumping back in to help soon. She has had a lot on her plate lately, and we sure appreciate all she has done. I look forward to more pics with Maribeth soon!

And now, lets begin!

Ingredients:

  • 1 1/2 lbs ground beef (or ground turkey works great too!)
  • 1 bag frozen vegetables
  • 1 Large Can V8 juice
  • 1 Large Onion (chopped)
  • Salt
  • Pepper
  • Garlic Salt
  • Oregano
  • One Bay Leaf

Brown your Ground Beef in large skillet.

When its almost done, add in your chopped onions, and salt and pepper it. Give it a few shakes with Garlic Salt too.

Pour the V8 Juice into a large pot and turn heat to medium.

Drain the fat off the ground beef mixture.

Add your frozen vegetables to the V8 Juice. Note, you can use a variety of vegetables from the frozen foods. One that is really good is the bag that says “Vegetable Soup Mix” . I also like the “Classic Mixed Vegetables”, and this is the one I went with today.

Add the veggies into the V8 Juice.

Stir them around.

Now once your beef is strained, add the beef mixture to the V8 soup.

Stir it up and add some seasonings, like a bay leaf, and some oregano, garlic salt, ground pepper and salt.

Look at all that beautiful color!

Flavor town! Now just let it simmer for about 10-15 min. Is it soup yet? I’m ready!

Well lets check. I think its ready! Let’s serve it up!

Oh now that looks good!

Served up with some crispy dinner rolls! Yumm!

Goodness gracious where are my manners? May I serve you up some soup?

You know there is always room for another seat at the table!

My parents always had room for another seat at the table. It was like a miracle table. Everyone just hooched their chair over and we would squeeze another person in! But the real gem in that miracle table is the heart that has a love for every person that walks in the door! The kind of dear sunny soul that is genuinely glad to see you every time you show up! That beautiful smile that greets you like they are so happy to see you they can hardly stand it! And a good hug of course! And then words like “Help Yourself” and “Here, let me fix you something to eat!” Doesn’t it just fill your heart with something so grateful, so hungry for true authentic love-  when someone treats you that way?

Each of us can be that person to someone else… we can be the one that makes them feel so loved, so welcome, that they feel like a million bucks! They know they are always welcome at your home. Can you put a price on that? No Way! We all want so desperately to be wanted, loved and welcome somewhere… anywhere!

A little effort, a little pampering, and you can whip up a batch of homemade soup and some good crusty rolls, and then let your guest have the finest seat while you pull up a chair and lavish them with questions and interest in their life. And as their tummy gets full, so does their heart. Because they know they are loved, and they know that any time they come to your door, there is always another seat at the table!

And friend there is always a seat for you at our table! We’re just crazy about you! Who wouldn’t be? Just look at you! Your smart, funny, friendly, interesting, and incredibly good looking! You are simply amazing! There is always room for you at the table!
