Tasty Tuesday and Freshtastic Salsa

Hi friends! It’s another Tasty Tuesday and I have an absolutely delicious salsa recipe for you today on the blog! I’m so excited to share it with you!

There are so many great things to love about salsa! It has so much flavor! It is low calorie! It makes a great topping on all sorts of foods! You cannot lose with a good salsa recipe! And it’s Cinco De Mayo week so I just had to do something to recognize this food group! This is a win-win, and I am so happy to share it with you!

This week, I need to thank Troy and Jake who helped put together a fabulous meal for these photos. All three of us were in the kitchen cooking. Troy worked on fajitas, I worked on salsa and guacamole and Jake worked on a pork taco filling. We had so much fun and of course we got to reap the rewards together as well! We worked together on the photos as well. So without further ado, let’s begin!

*Note: I would consider this a “medium” on the spice scale, so you can increase or decrease the hot ingredients based on what your tastes are.

Ingredients:

  • 2 Roma Tomatoes chopped
  • 2 14 oz cans of diced tomatoes (undrained)
  • 3 cloves of garlic, minced
  • 1 medium white onion chopped
  • 1 jalapeno pepper seeded and chopped (increase or decrease based on how much heat you like)
  • 1/3 cup of fresh cilantro washed and chopped
  • Juice from 1 lime
  • 1 Tbsp cumin
  • 1/2 tsp cayenne pepper (increase or decrease based on how much heat you like)
  • 1 tsp salt

Chop the white onion. Chop the tomatoes. Wash and chop the cilantro.

Cut off the stem end of the jalapeno (discard) and slice the pepper length wise. Remove and discard the seeds and the white center. This is the hottest part of the jalapeno.

Chop the remaining portion of the jalapeno so that the pieces are fairly small.

Take your 3 garlic cloves and mince them.

Measure your dry ingredients. Begin adding everything to your blender including your 2 cans of chopped tomatoes, juice and all.

Add the juice from 1 lime.

Oooh look its already pretty!

Time to blend! Blend for 10-15 seconds or until it looks like everything is incorporated.

Time to test it. Just to be sure. Troy got to go first.

And its a win! Time to pour into an airtight container (or two) and refrigerate for a few hours. This allows the flavor to really come together!

And voila! That is all there is to it! Can you believe it?

Well, wait a second… we need some chips.

That’s better! Now I better test it… .

This could take hours of research! But wait! We have more fixin’s.

There we go! Fresh salsa, guacamole, fajita chicken and vegetables and chips…

This just gets better and better!

Please, pull up a chair and make a plate! So much delicious fresh food and I just want to share it with you!

It’s been quite a few years now that Salsa has the title for being America’s favorite condiment. When you make it at home, its just so fresh! Mouth Watering and delicious!

Once you have a good salsa recipe, people will ask you to bring it all the time! I use to do that until I learned how to make it myself!

Yumm! A flavor fest for your taste buds!

I think one of the things we like about eating salsa is that its light… you can eat it forever! We’ve spent so many nice evenings sharing salsa and chips as a family and just laughing and having great conversations. There is something about the zippy zesty flavor that communicates an attitude of fun in the meal. Kind of like a rollercoaster in a dip! And what makes it all the more magical is that we all share dip from one bowl. I think there is something special that happens when we share that way. It brings us together.

Sometimes its fun to just put aside the worries of the day- turn off the news, and turn on some fun music, maybe even Latin music! Its beautiful and cheerful! And then put together a delicious meal with homemade freshtastic salsa! And laugh and enjoy each other’s company as you enjoy this peppy salsa!

I asked Jake the other day what his favorite part of the day was, and he said “eating salsa and fajitas with you and dad”. Now he had had a full day with lots of people. But here in the safe haven of his home and with his mom and dad (and doggy) who he knows love him more than anything, and the salsa that pulled us all together with a declaration that this meal was going to be fun, this is what marked the moment as a highlight of the weekend. It is important to make these fun moments happen. Everything else is on hold while we savor a moment with some spicy salsa! Our home, our meal, our conversation- all become a fortress protecting body mind and soul from any negativity for this little break in the day.

The more of those fun moments we have, I think those are the gold in life. You can hang onto those thoughts to shield you from the worries of the world. And they create memories that you can savor in the weeks and months to come.
