Tasty Tuesday and Royal Mint Chip Ice Cream Pie

Hi Friends! I hope you are having a fantastic week!

July is National Ice Cream Month! So its the perfect time to “go big or go home” with a super decadent delicious dessert, Royal Mint Chip Ice Cream Pie! I haven’t done a dessert for a few weeks, and in the summer, there is nothing like ice cream to cool you down! So I decided to whip up a mint chip ice cream pie!

Believe it or not, Mint Chip Ice Cream is the #1 flavor in the USA! Yes, it beat vanilla, which is this year at #4! I read an article recently that surveyed 1,000 Americans for their favorite ice cream flavor, and this was their finding: (National Today)

Who knew? I know a lot of people that would say the same! It is only fitting that our ice cream dessert should use the number one flavor! So without further ado, let’s begin!

First, let me begin by saying that leaving me alone in the kitchen with a tub of mint chocolate chip ice cream, a package of Oreos, a jar of hot fudge, chocolate chips, whipped cream and syrup is a very dangerous thing to do. I’m really glad there wasn’t a hidden camera. So we will just keep this between us friends, ok?

Ingredients:

  • 20 Oreo Cookies, Crushed
  • ¼ c melted butter
  • 3 cups Mint Chip ice cream softened 
  • 1/2 cup mini morsel chocolate chips
  • 1 bottle Hershey’s Chocolate Syrup 
  • 1 small jar hot fudge topping
  • 1 container whipped topping

Making the Crust:

Count out your 20 Oreo cookies.

Place them in a large ziplock bag and with a rolling pin or heavy plate, crush them till they are crumbly.

In a small frying pan, melt 1/4 cup of butter, and add in your crushed cookie crumbs.

Toss the crumbs around until they are all shiny and glossy. Let them coat and simmer for maybe 2 minutes tossing gently.

Pour the crumbs into a 9″ pie plate and press gently in place making a crust.

Bake at 375° for about 8 minutes. Allow it to cool thoroughly.

When this first comes out of the oven, it smells so good! You will be tempted to just pour a glass of milk and polish the pie shell off. But resist! Good things are ahead, trust me!

Next, place your ice cream in a medium sized bowl and stir; this helps the ice cream soften further.

Gently scoop into the pie shell, and using a spoon, press the ice cream in place trying not to break up the Oreo crust.

Microwave (lid off) your jar of hot fudge for about a minute and stir. You don’t want it hot, you just want it pourable. Pour/drizzle a layer of the fudge topping over the ice cream carefully moving around the surface as you drizzle it on to try and cover it completely.

Freeze for about 20 minutes.

Add on a nice fluffy layer of the Cool Whip.

Sprinkle with chocolate chips. Then freeze about 2 hours, or until ready to serve.

When you are ready to serve, as you slice each piece and place on a plate, drizzle with Hersheys Chocolate Syrup. And Voila!

Friend, the Oreos in this are so on point with the ice cream.

And the fudge topping that you poured over the ice cream… decadent, exquisite, rich, over the top!

Just lifting the plate, you know this is a dessert fit for a king!

You will need a little muscle to cut into it. You are cutting through frozen ice cream and chocolate chips and cookies.

It’s a showstopper. A gaspworthy dessert that will be the talk of the town!

Ice cream is such a unifier! If there is one thing that will draw people together and put a smile on their face, it’s ice cream. Your guests will look at that dessert and know that you care very much for them. Because ice cream is like a happy pill! Don’t you just get happy when you are about to enjoy some ice cream? It’s a common ground that could help solve a whole lot of disagreements! And you get to serve that up to your friends and family!

If we could make people happy every day of our lives, I would count that as a very fulfilling life indeed, don’t you think? You would feel like the richest person in town. When you serve a dessert like that, all through the meal is this secret sense of excitement because you know you have saved the best for last, and you are about to wow the socks off of them! And doing a good thing like that feels amazing. I highly recommend it.
