Tasty Tuesday and Fantastic Chicken Fajitas

Hi Friends! It’s another Tasty Tuesday, and this week we are sharing how to make chicken fajitas! It’s one of our favorite treats in the world, and you can make them yourself!

Before we begin, I want to thank my husband Troy who helped cook the fajitas. He is the family grill master… though my son Jake is following in his footsteps!

We love going to Mexican restaurants and ordering fajitas! We love when they come to the table on one of those cast iron skillets just sizzling away! But they are so delicious when you make them at home! It’s as though the flavor comes through so much more clearly! So without further ado, let’s begin!

Ingredients:

Meat

2 lbs of chicken breast (I buy the one labeled “Thin Sliced with Rib Meat”)

Marinade for meat:

  • Juice from 1 lime
  • 1/3 cup of water
  • 2 cloves minced garlic
  • 2 Tbsp olive oil
  • 2 tsp soy sauce
  • 1/2 tsp liquid smoke
  • 1 tsp salt
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper

Sauce for the Vegetables:

  • 2 Tbsp water
  • Juice from 1/2 lime
  • 1 tsp Soy Sauce
  • 1 Tbsp Olive Oil
  • Dash of salt
  • Dash of pepper

Vegetables:

  • 1 large white onion sliced
  • 1 each red, green, orange pepper sliced

Prepare the marinade for the chicken first.

In a large bowl, add the juice from a lime.

Add the water, the garlic, and the olive oil.

Add in the Soy Sauce and the Liquid Smoke… this smells so good!

Add in the spices (Cayenne, Salt & Pepper) Isn’t that cayenne a pretty color?

Take a whisk and stir the marinade. Add the chicken and refrigerate for at least 2 hours.

While the meat is marinating, you can slice up your vegetables.

Prepare the sauce for the veggies. In a small bowl, add the water, soy sauce, lime juice, salt and pepper. Set aside.

Heat barbecue, and grill meat over medium flame, 4-5 min per side.

You can cut into the meat to see if the juices run clear. If so, then it’s done. Take meat off grill, cover, and set aside.

Pour a little olive oil in a large skillet to cook your veggies in. Add in the veggies

Cook veggies in oil until slightly brown.

Add the vegetable sauce you prepared. Coat/gently stir.

And voila! You are done cooking and ready to eat! Slice up the chicken in thin pieces.

Put it on a platter and people can build their own Fajitas! Wow! That will keep ’em busy!

Yumm! Grab a plate! Eat ’em while they are hot!

Don’t mind if I do! Let’s start with a little guacamole (fresh made!)

Add some chicken, peppers and a little salsa (also fresh made)

And that’s a wrap! Hah!

I just have to share with you, my sister Stacey got me the towels and salt & pepper shakers below as a Mother’s Day gift this past Sunday, Thank you Stacey!

It’s really an easy and fun meal to put together. And you can use the meat on a salad too if you prefer!

Yum Yum! The Liquid Smoke and the Soy Sauce are kind of the stars of the marinade. So good!

Honestly for years we just figured we would never know how to make fajitas, but then we began to try. And its not that hard! I think it really helps buying the thinner cut of the chicken breast. It totally makes it so much easier to cook it on the grill!

And when you serve it up with all of the fixin’s, well its pretty hard to beat! Let’s be honest, its amazing!

This dinner is so chock full of flavors, it’s like a symphony in your mouth! The sizzling savory chicken and the zesty zip of the salsa creates a mouth watering fiesta that makes you want to shout “Ole!”

The colors and flavors are so full of life! Like a celebration of truly delicious and flavorful food! It’s a great concept to transcend into your life as well! When we savor the relationships around us, and let the vibrancy and joy flood your heart when you give more than you gain, that is when our lives become like a fiesta! All of life becomes a celebration!

And a meal with a dear friend is the perfect place to begin to savor the most beautiful thing in life… that is friendship! That is why I love love love to connect with you! You make this world a feast for the soul!
